Northerner Porter

Are you a Northerner?  Do you use umlauts when you speek?  You might after drink a few of these.

Low bitterness, smooth and creamy, with a sweetness not unlike
a Guinness or Murphy's.   Expect about 7.5% ABV.

Grain Bill
10 lb Marris Otter
0.5 lb Biscuit
0.5 lb Cara-pils

At mash out add..
0.5 oz Chocolate
0.25 oz Peat Smoked
0.5 oz Smoked

Hop schedule
60min - 2 oz Fuggles
10min - 0.5 oz Fuggles

Yeast
Burton Ale Yeast (WLP023)

Better British Bitter

This ale is my best bitter using a combination of Traditional English and West Coast Hops.  ABV levels are at the high end for this style, ~5%.  This ale is still in primary, so I have yet to taste it, however this grain bill has proven it's self time and time again to have a great body and mouth taste.


Grain Bill
8 lb Marris Otter
0.5 lb Acidulated Malt
0.5 lb Biscuit
0.5 lb Cara-pils

Hop schedule
60min - 0.5 oz Target (8% alpha)
60min - 0.5 oz Kent Golding's (7%alpha)
10min - 0.5 oz First Gold

Yeast
Nottingham blend (most any British Ale Yeast will be fine)

American Best Bitter

This ale is my best bitter using West Coast Hops and pumped up to American ABV levels ~6.5%.  Centennial Hops (adjust quality to % alpha of hops) can be used in place of Falconer's Flight.  Mildly hopped with citrus and apricot tastes.

10 lb Marris Otter
0.75 lb Acidulated Malt
0.5 lb Biscuit
0.5 lb Cara-pils

Hop schedule
60min - 1 oz Falconer's Flight (11.5% alpha)
30min - 0.5 oz Falconer's Flight
0min - 0.5 oz  Falconer's Flight

Yeast
San Diego Super and Nottingham blend (most any British Ale Yeast will be fine)
